I discovered this pizza recipe at Serious Eats a few months ago and it is brilliant. I’ve tweaked this pizza recipe with my own lower carb technique and variations from simply cheese to pepperoni and olives… you name it! Just try to avoid overloading your pizza with high moisture veggies unless you cook or saute them first. This will help retain the crispy crust we love so very much. WHY THIS RECIPE WORKS:
- Uses simple ingredients you probably already have in your kitchen.
- Use a heavy iron skillet to get the perfect results.
- Use low carb tortillas to make this pizza diabetes friendly. Choose a size tortilla that will fit in your skillet.
- Choose your favorite cheese– low fat, mozzarella, etc.
- Simple toppings help keep the tortilla from getting soggy.
THE MAIN INGREDIENTS:
- Tortillas– choose your favorite low carb tortilla to help keep carb count low. If you are cooking for your family/friends-feel free to use regular tortillas if desired.
- Pizza sauce– I actually used lower carb marinara since that is what I had on hand. Adjust the amount to suit your preferences.
- Cheese– I choose asiago cheese for an authentic pizza flavor.
- Other toppings– pepperoni, olives, herbs just to name a few. Try not to use too many moist veggies so your tortilla will stay crispy.
HOW TO MAKE THIS RECIPE:
- Step 1- Heat olive oil in a medium size oven proof skillet.
- Step 2- Add tortilla and heat until browned then flip.
- Steps 3 thru 5- Add toppings
- Step 6- Bake

- Allow the tortilla to get evenly browned and crispy in the skillet before flipping.
- Use the minimum amount of pizza sauce to help keep tortilla crispy.

Can you eat pizza if you have diabetes?
Pizza can be a part of a diabetes diet if a few things are taken into consideration. Be sure to choose a thin crust to help minimize carb counts. Ingredients
- ▢1 teaspoon olive oil
- ▢1 tortilla low carb
- ▢3 tablespoon pizza sauce
- ▢⅓ cup cheese
- ▢5 each pepperoni

Instructions
- Preheat oven broiler.
- Heat olive oil in a heavy iron skillet (oven proof).
- Place tortilla in skillet and heat 2-3 minutes or until browned and crispy.
- Flip tortilla to other side then add sauce and toppings as desired. Top with crumbled oregano if desired.
- Place skillet in oven just until cheese melts and tortilla edges start to brown. Approx 2-3 minutes depending upon your oven. Watch closely to prevent over cooking.
- Slide pizza out to serving pan and slice.
