This BBQ chicken salad has so much flavor with grilled BBQ chicken, black beans, corn, avocado, crunchy tortilla chips and a drizzle of both BBQ sauce and ranch dressing.
I have been making this BBQ chicken salad recipe for ages so I honestly don’t know what took me so long to get the recipe tested.

Lucky for you, I finally perfected the recipe and I’m sharing it today

This salad is packed with flavor from the grilled BBQ chicken, a variety of vegetables and not one, but two sauces, BBQ sauce and ranch dressing.
And for added crunch, it’s topped with crushed tortilla chips!

key ingredients

1-2-3 grilled BBQ chicken breasts, chopped

2-6 cups chopped romaine lettuce

3-1 can (15 oz) black beans, drained and rinsed

4-1 cup frozen sweet corn or fresh grilled corn

5-1 cup chopped cherry tomatoes

6-½ cup diced red onion

7-1-2 avocados, sliced

8-½ cup shredded monterey jack or cheddar cheese

9-½ cup crushed tortilla chips, optional

10-BBQ sauce, for drizzling (homemade or store-bought)

11-ranch dressing, (homemade or store-bought)

What you need

grilled bbq chicken breasts – simply follow my recipe for grilled BBQ chicken.

You can prep the chicken 1-2 days in advance, if desired!

romaine lettuce – I like using romaine lettuce in this salad for the extra crunch, but you could use any greens you have on hand! Delicious dinner salad recipes

black beans – I like using canned black beans to save time.

Just make sure you drain and rinse them well!

sweet corn – frozen or fresh both work.

If you have time to grill the corn, it adds so much flavor!

cherry tomatoes – any type of tomato works but I’m partial to cherry tomatoes because they’re so sweet.

red onion – add a little zest to the salad with chopped red onion!

avocados – I love the creaminess and healthy fats avocado adds.

To select a ripe avocado, press the skin in gently.

If it gives slightly (not too much!) it’s ripe.

shredded monterey jack or cheddar cheese – feel free to omit the cheese to make this salad dairy-free or use a vegan version.

crushed tortilla chips – any tortilla chips work!

We’re big fans of Late July tortilla chips, but the Siete brand is great if you are looking for a grain-free option.

BBQ sauce – make your own or use a store-bought sauce.

I like the Primal Kitchen brand because there is no added sugar!

ranch dressing – again, homemade or store-bought works! I love making my vegan ranch dressing, but if I’m short on time I like Primal Kitchen, Tessamae’s or Bolthouse Farm for a healthy store-bought dressing. Delicious dinner salad recipes

Follow these steps to save your time

You should use theses simple time saviour steps

Grill your chicken ahead of time or use rotisserie chicken. Just toss the shredded rotisserie chicken in BBQ sauce before adding.

Use canned black beans. Instead of soaking and cooking beans just crack the can open, drain and rinse!

Use store-bought BBQ sauce and ranch. I shared some of my favorite brands above in the ingredient section.

How to meal prepare for this bbq salad ?

There are a few ways you can meal prep this salad! If you have a large, wide-mouth mason jar, you can create a mason jar salad!

1-Start by putting 2 tablespoons of ranch in the bottom of the jar.

2-Add the red onion and corn.

3-Layer the black beans, cherry tomatoes, romaine and cheese.

4-Top with the bbq chicken!

5-When ready to eat, empty the jar into a bowl and top with avocado and crushed tortilla chips.

If you don’t want to make a mason jar salad, you can also prep this in a standard glass container.

Line bottom of container with the romaine lettuce and layer all ingredients in columns/sections on top.

Store dressing in a separate container and save the avocado and tortilla chips for serving

How to make BBQ salad ?

1-Grill BBQ chicken, if you haven’t already.

2-Prep salads by adding lettuce and the salad toppings to three bowls. Start with chopped lettuce and then add grilled chicken, black beans, corn, tomatoes, red onion, avocados and cheese

3-Add ranch dressing and add a drizzle of BBQ sauce, if using

4-Top with crushed tortilla chips, if using and serve.

2-Fuji apple salad

I basically survived off of Panera Bread‘s fuji apple salad during college and it’s still my go-to order when we happen to stumble upon a Panera!
Naturally, I set out to recreate my own version of this salad at home!
I made a few changes so it’s not exactly like the Panera version, but it definitely tastes like a salad you’d get at a restaurant.
And it’s the perfect salad for the beginning of fall/end of summer because it uses both apples and tomatoes. Delicious dinner salad recipes

Key ingredients

1/4 cup cherry tomatoes, chopped

1/4 cup pepitas or toasted pecans

1 large Fuji or Honeycrisp apple, sliced or chopped2 4-6 oz grilled chicken breasts, thinly sliced

Fuji Apple Chicken Salad Ingredientsspring mix, romaine and/or baby spinach – any greens you have on hand will work, but I like using a spring mix, romaine and/or baby spinach

Fuji or Honeycrisp apple – Panera’s version of this salad uses crispy apple chips, but I like the flavor and crunch that raw apples add so that’s what I’m using. I recommend using Fuji or Honeycrisp apples.

grilled chicken breasts – see my note below about how to make the grilled chicken

crumbled Gorgonzola – fresh gorgonzola cheese adds a ton of flavor to this salad! If you don’t like the flavor of gorgonzola you can swap it for your favorite cheese. Goat cheese or feta would be nice subs.

cherry tomatoes

pepitas or toasted pecans – Panera’s version uses pecans, but I’m using pepitas (pumpkin seeds) for this version. Either work great!

How to make ?

Grill chicken breasts if you haven’t already. See notes above for how to grill the chicken. This step can be done up to 2 days in advance.

Just keep grilled chicken breasts in the fridge until ready to prep the salad.

Divide greens among two individual plates and top with remaining ingredients. Add dressing to taste and enjoy

This Thai curry chicken salad, with fresh pineapple, cucumber, bell pepper, and creamy dijon dressing, is fresh, bright, flavorful and filling.

How’s your week going thus far?
Despite the cold weather and snow(!!) we’ve been having here I’ve still been craving salads.
Lunch or dinner, it doesn’t matter — all I want is a huge salad that’s flavorful, easy to throw together and totally satisfying.
To make the prep easy I like to have a couple quick cooking protein options, healthy fats and a variety of veggies on hand.
Some of my favorite protein options include shrimp, edamame, tempeh, tofu, hard boiled eggs and chicken.

xI’ve talked about it before, but my favorite chicken is the Whole Foods Health Starts Here Thai curry chicken.

It’s curry flavored, obviously, but also has a bit of spice and salt to go along with it.

It’s really the only chicken I’ve LOVED since introducing meat back into my diet.

I like it so much I’ve even made my own version of the Whole Foods seasoning blend so that I can make the chicken at home without having to buy the seasoned skewers from the meat department

This version has fresh pineapple (to ease the spice of the chicken), red onion, cucumbers, bell pepper and creamy dijon dressing.

It’s fresh, bright, flavorful and filling. Basically, everything you want from a meal-sized salad.

Key ingredients

Salad ingredients:- 4 boneless skinless chicken breasts, 3-4 oz eachspring mix,

romaine lettuce or baby spinach

1 red bell pepper, chopped

1 cucumber, sliced

2 cups chopped pineapple

1 cup red onion, choppedgomasio, to taste (optional)

Thai curry spicy rub :- 2½ Tablespoons curry powder

½ Tablespoon onion powder

2-3 teaspoons crushed red pepper flakes

1½ teaspoons sea salt

1 teaspoon dried parsley

Creamy Dijon Dressing:- ½ cup plain greek yogurt

2 Tablespoons dijon mustard

1½ Tablespoons maple syrup

1 Tablespoon lemon juicesalt and pepper, to taste

How to make ?

Combine the curry powder, onion powder, crushed red pepper flakes, sea salt and parsley in a small bowl to create the rub. Use as much of the rub as needed to cover each chicken breast.

You may have a bit of the spice rub left over — just store any of the remaining non-contaminated spice mix in an airtight container for later use.

Heat 1 teaspoon of coconut oil in a skillet over medium heat.

Placed seasoned chicken breasts into the skillet and cook for about 10 minutes on each side, until juice runs clear.

Remove from heat and let sit for a few minutes to cool.

Once cool, slice the chicken for the salads

While the chicken is cooking, place all ingredients for the dressing in a small jar or bowl.

Whisk until combined and set aside.

Divide your greens, bell pepper, cucumber, pineapple and red onion on to four plates.

Top each with a portion of chicken.

Drizzle a little creamy dijon dressing over each salad and top with a sprinkle of gomasio, if using.

Grilled Salmon Salad with Peaches and Corn

A few weeks ago I grilled salmon and served it over salad with a bunch of seasonal produce — fresh and juicy sliced peaches, baby tomatoes and sweet corn — all from our local farmers market.
It was the perfect summer salad and plenty filling to serve as a full meal.
The whole meal comes together rather quickly so it works well for a weeknight meal or easy Sunday supper The key to this salad is making sure you have super fresh produce. Delicious dinner salad recipes

The produce is what takes this salad to the next level and if it’s not perfectly ripe, it won’t be nearly as good.
Soft and juicy peaches, bright and flavorful tomatoes and the sweetest corn.
Once you have those things covered you’re good to go!
You’ll just need to pick up some fresh salmon as well.

Key ingredients

1-fresh salmon

2-apple cider vinegar

3-olive oillow-sodium tamari – soy sauce and/or coconut aminos work great too!

4-maple syrup

5-peach – look for one that is ripe and juicy

6-fresh corn – frozen corn works in a pinch of

7-fresh corn from the cob is the best

8-cherry tomatoes

9-baby greens

10-balsamic vinegar & olive oil

11-salt and pepper

How to make ?

Even if you don’t follow this recipe exactly, know that grilled salmon with fresh produce is an incredible combination! This salmon salad recipe has four main steps: marinate, grill the corn, grill the salmon, assemble the salad.

Step-1

1-Start by making a marinade for your salmon. In a small bowl, mix the apple cider vinegar, olive oil, tamari, maple syrup and pepper. Pour the marinade into a dish and place the salmon skin side up in the dish so the flesh is in the marinade. Let the salmon marinate in the fridge for 20-30 minutes.

Step-2

2-While the salmon is marinating, grill your corn. Keep the husks on and grill on high heat for 15-20 minutes. Make sure you turn the corn occasionally so it cooks evenly. Once it’s done cooking, let it cool before husking and cutting the kernels from the cob. If you don’t have a grill, you can boil the corn instead.

Step-3

3-When you’re ready to grill the salmon, you’ll lightly oil the grate and heat the grill to medium heat. Place the salmon on the grill flesh side down and discard the marinade. Cook the salmon for a few minutes (until you get grill marks!) and then flip so the salmon is skin-side down. Cook for 8-10 minutes or until the flesh flakes easily with a fork. If you don’t have a grill, a grill pan works great for this recipe!

Step-4

4-You’ve made it to assembly! Plate a bed of salad greens on two plates, add your sliced peaches, tomatoes and grilled corn. Top with a grilled salmon fillet. With the flavors of the fresh produce you almost don’t need a dressing, but I like to serve the salad with a little balsamic vinegar and olive oil or this zesty tahini dressing from my favorite kale salad.

5-Cheese burger salad

Before you judge this recipe by it’s name and think that a “cheeseburger salad” sounds less than appetizing… let me break it down!love enjoying a cheeseburger, but I don’t love feeling heavy and bloated after indulging. This salad is a lighter way to enjoy a cheeseburger! It’s basically a deconstructed burger without a bun… Just think of it that way if a cheeseburger salad sounds too weird to you. 😜

Key ingredients

ground turkey – you’ll brown this with a few seasonings and spices for ultimate flavor! You can use ground beef if you prefer!
romaine lettuce – the base of this salad. Feel free to mix in other greens as well!
red onion – add a little zest with sliced
red onions.
cherry tomatoes – any type of tomato will work!
pickles – add dill pickle slices or a chopped pickle to the salad! You can also use bread and butter pickles or homemade pickles if you’re lucky enough to have some.
cheddar cheese – gotta have cheese on the cheeseburger! Omit if you need this to be dairy-free.
avocado – add healthy fats and a delicious creaminess

honey mustard dressing – I love this sweet and savory dressing on this salad! Use my homemade recipe or store-bought. I really like the Primal Kitchen honey mustard dressing! I’m also sharing some other dressing options below. Delicious dinner salad recipes

Cheese burger meet

The delicious cheeseburger meat is what makes this salad so tasty and we’re using ground turkey to keep things on the lighter side!

The turkey is cooked up with a mixture of red onion, garlic powder, onion powder, ketchup and Worchestire sauce

Prep honey mustard dressing: Make dressing by blending all of the ingredients together

Cook turkey: Place the ground turkey into a skillet over medium heat and cook meat for about 12 minutes, breaking the turkey with a spatula apart as it cooks. Delicious dinner salad recipes

Once the meat is browned and fully cooked, stir in 1/4 cup diced red onion, ketchup, Worchestire sauce, garlic powder and onion powder.

Toss to combine and remove from heat.

Make salads: Prep salads by adding a bed of romaine to each bowl.

Top each salad with toppings: seasoned turkey meat, red onion, tomatoes, pickles, shredded cheese and avocado slices.

Drizzle on dressing and serve.
